Ground Beef Cooking Day
In November I prepared a bunch of meals for the freezer, in preparation for our Snowbird vacation. I prepared nearly everything for the meals ahead of time. For omelets I cut the veggies, cracked three eggs into a Ziplock baggie, and had the kids squeeze them to mix them. One morning I heated a pan, poured the eggs into the pan, cooked them, topped it with the veggies and cheese and I had a nice breakfast prepared in to time.
I had gotten a fantastic deal on chicken breasts that month and had bought a case, so we ended up eating quite a bit of chicken. (I’ll get around to posting the recipes I used sometime). Recently I picked up a case of ground beef (40 lbs.) for $35.00, so it ended up costing me $.88 a pound. I already had one 5 pound chug in the fridge so I’ll be preparing 45 lbs. over a period of a couple of days.
Here’s what I added to the freezer, or what we ate right away:
- 3 batches of Spaghetti Sauce – 1 Gallon Each
- Taco Meat – 3 Quarts
- 1 Nacho Cheese Casserole (double batch)
- Taco Soup 1 Batch for Dinner Party, 1 Batch for Family, 3 Batches for Freezer
- 3 packages of Baked Potato Topping
- 3 Chinese Casseroles
- 3 Noodle Casseroles
- 2 Gallons of Alaskan Stew
- 2 Meatloaf – 1 for freezer, and one for that nights dinner
- 2 Pans of Lasagna
- 1 Gallon of browned Ground Beef for other meals
I think I may have missed writing down a few things as well. By this count I got 28 meals out of it at an average cost of less than $5.00 per meal, for a maximum of .62 per serving. The Taco Soup served more than eight people per meal, but I just based everything on eight servings.
